Alkaline proteases are a class of enzymes that efficiently hydrolyze proteins under alkaline conditions. They are extracted from Bacillus licheniformis through deep fermentation. The optimal pH is 8.0–10.0, and the optimal temperature is 50–60℃. They degrade large protein molecules into smaller peptides and free amino acids. They are widely used in the production of enzyme-containing detergents, protein peptides, animal feed, and pet food.
