β - glucanase is a group of enzyme preparations that are refined and extracted from selected strains of Aspergillus niger through deep fermentation, followed by microfiltration, ultrafiltration, and vacuum freeze-drying techniques. It is a general term for enzymes that can catalyze the hydrolysis of β - glucan.
