Cellulase is a complex hydrolytic enzyme containing endoglucanase, exoglucanase, and β-glucosidase. It works synergistically to hydrolyze cellulose into oligosaccharides and cellobiose, ultimately converting it into glucose. In the food and beverage industry, it is used in the processing of oat milk, rice milk, and mung bean juice to increase juice yield and improve taste; in fruit and vegetable processing, it breaks down fruit peel fiber to improve raw material utilization; and in the feed industry, it breaks down crude fiber to improve the digestibility and absorption rate of livestock and poultry.
