    Alpha amylase is an enzyme preparation prepared by Bacillus subtilis through deep fermentation, ultrafiltration and other processes. It can hydrolyze starch into various short dextrins, as well as small amounts of low molecular weight sugars, glucose and maltose, to achieve the conversion and utilization of starch. Applied in industries such as alcohol, beer, monosodium glutamate, starch sugar, fermentation liquefaction, juice processing, baking, printing and dyeing desizing, and feed industry.  


    Alpha amylase is relatively stable at pH 5.0-6.0. The effective temperature range is 35-90 ℃, which is relatively stable below 60 ℃. The optimal operating temperature is 60-70 ℃, and it can be applied to liquefaction processes up to 90 ℃.
