Lysozyme is a natural animal-derived antibacterial enzyme preparation, primarily used as a biological preservative and freshness-keeping agent in food processing. It can destroy the cell walls of Gram-positive bacteria, inhibit the proliferation of spoilage microorganisms, and reduce the use of chemical preservatives. In dairy products, it can be applied to cheese processing to inhibit the growth of gas-producing bacteria and extend the storage period. When added to meat products, pastries, and cooked flour products, it can inhibit spoilage bacteria, delay product deterioration, and extend the shelf life. In the production process of fruit wine and Baijiu, lysozyme can inhibit the excessive proliferation of contaminating bacteria and reduce wine turbidity.
